I’ve hit a new low in Siberia-15 F 😉

I finally have some good news. It looks like things are picking up on the work front. I think a long translation of some obscure economic document is in the works for me. Downside: it’s an obscure 40 page long economic document. Upside: I get paid. Yay. lol. Otherwise, things are going just fine. I took a brisk walk outside in 15 F degree weather. Nothing out of the ordinary for a Siberian morning. 🙂

Mom’s working on getting us some better internet. It’s been so stressful trying to work and teach and work on S.Iv’s book while having an awful Internet connection. Grrr. Internet has been the bane of my existence for the past 6 months. On the flipside, I think I’ve been finally cured of the tech addiction that is so prevalent among modern people today…

Today I woke up and prayed like I always do. I usually say what it is I’m grateful for but today I felt like praying for others. Even within my small sphere of influence there are so many people to pray for. My father who has ongoing health problems with his knee ( he was shot over a decade ago). N, who is facing a 6 months prison term for a stupid prank. J, who has an alcoholic mother she loves nonetheless. M, who is recovering from a suicide attempt.  There is hope. Turn to God and then do the best that you can. After all, God helps those who help themselves.

Exercise: morning stretches, power walk, 1 hr strength/plyo combo (yay, mom worked out with me today 🙂

Meals:

1: 10 apricot kernels, propolis, power smoothie (aronia berries, pumpkin, RWP, raw kefir)

snack 1: chicory drink w/raw honey

2: bowl of soup, zapekanka w/cornmeal and pumpkin

snack 2: hot cocoa w/raw milk and raw honey

3: bowl of raw cottage cheese w/persimmon, large slice of zapeknka,

4: side of dill, baked pumpkins w/curry glaze, cottage cheese

Easy, Healthy Borscht Recipe

I know what you’re thinking. What’s in the world is borscht? Or, Eww…beets. Borscht is a traditional Russian soup (originally Ukrainian) that is both delicious and nutritious when done right. I know because I’m making some today! 🙂 Here’s how:

 

Ingredients for Borscht: 
2 large or 3 medium potatoes, sliced into bite-sized pieces
2 large or 3 medium beets, thoroughly washed
1 medium onion, finely chopped
2 carrots, grated
1/2 head of cabbage, thinly chopped (see picture)
1 can white beans with their juice
4 tablespoons oil
2 bay leaves
6 teaspoons “Organic Better Than Bouillon Chicken Base” Paste (this is equivalent to 6 cups of chicken broth. If using chicken broth, use 10 cups water and 6 cups broth)
5 tablespoons ketchup
4 tablespoons lemon juice
1/4 teaspoon freshly ground pepper
1 tablespoon chopped dill

How to Make Borscht:
1. Fill a large soup pot with 16 cups of water. Add beets. Cover and boil for about 1 hour (some beats take longer, some take less time. It depends on how old the beets are).
2. Once you can smoothly pierce the beets with a butter knife, remove from the water and set aside to cool.
3. Add sliced potatoes into the same water and boil 15-20 minutes.
4. Sautée your carrots, onions and bell pepper (optional), with 4 tablespoons cooking oil. sauté until vegetables are soft (7-10 minutes). Stir in ketchup when they are almost done cooking.
5. After the potatoes are almost done cooking add sliced cabbage to the pot.
6. Peal and slice the beets into match sticks (I use my mandolin slicer). When you peel beets, use a plastic bag over your hands unless you want red fingers. Add beets back to the pot.
7. Add Bouillon paste, lemon juice, pepper, bay leaves and can of white beans (with their juice) to the pot.
8. Add sautéed carrots, onion and bell pepper to the pot.
9. Add chopped dill.
10. Cook another 5-10 minutes, until the cabbage is done.
11. Serve with a dollop of sour cream or real mayo.

The use of beets in borscht make it a powerhouse of nutrients. Beets cleanse the liver and promote healthy digestion. They are very alkaline in nature. Red beets cleanse the blood and contain large amounts of folate. Beets are high in antioxidants, fiber, magnesium, calcium, niacin, biotin, and iron.

2: delicious bowl of steaming hot borscht to energize during the cold weather

snack 1: 6 large slices of roasted pumpkin. beyond delicious 🙂 herbal tea w/raw honey

2: 1 apple, large bowl of “vinaigrette” salad (apple, cabbage, beets, carrot, potatoes)

3: bowl of buckwheat w/vegetable medley

snack 1: 1 avocado w/dill and himalayan salt

snack 2: 10 hazelnuts, 1/2 persimmon

4: bowl of buckwheat w/”vinaigrette” salad

First snow!

The mystery of the morning power outage has been solved. It’s first snow here in Siberia!!

Mom: “Have you taken a look outside today?”

Me: Uh huh-what I always say when I’m ignoring people

Mom: “First snow!”

Me: “Uh huh…wait what? HOLY F***”

Yeah, haven’t seen snow in about 5 years since I’ve been in Fl….

Woke up extra early today, well, before 6 like always. Did my stretches, meditation, etc. only to find out that the power is out once again so once my laptop dies what am I going to do all day? Hope it comes back again…

Exercise: 30 min stretch,  one hour plyo (20 min) and strength (40 min), 30 min walk

Meals:

1: 10 apricot kernels, herbal tea w/raw honey, propolis, power smoothie like always

2: 1/2 pomegranate, bowl of millet w/assorted veggies, side of cottage cheese w/dill

3: large bowl of “vinegerette” salad, fish w/lemon juice, herbal tea, chicory drink w/raw honey

snack 1: hazelnuts, chicory drink w/raw honey

4: green smoothie w/RWP, 1 persimmon, some “vinegerette” salad

Hi everyone…so I’m kind of stuck inside my cabin because the weather is awful and there’s no one around to hang out with :// (bumming…) but on the bright side the Internet is working (yay 🙂 and I can waste countless hours on pinterest and reading the latest fitness gossip on fitsugar. Yep, it’s one of those days…

Exercise: 30 min stretch and short work, 1 1/2 hr strength w/cardio bursts (pretty much what I do every day, I do vary the exercises though)

Meals:

1: 12 apricot kernels, propolis, power smothie (RWP, kefir, various berries, flaxmeal)

2: large bowl of buckwheat w/salad, 1 cup hot chocolate w/ raw honey…

3: bowl of cottage cheese w/salad and bowl of greens

4: bowl of buckwheat w/ 1 avocado. black tea w/raw honey

I’m thinking of cutting down the lactose in my diet because it’s giving me some difficulties…Ah, I do love my dairy though.

Is this my future?
